Cider apples are grouped into sweets, sharps, bittersharp and bittersweets. Sharps contain acid, sweets contain sugar and bitters contain tannin – the three essential components of cider. The art of producing a good cider is mixing these in the correct proportions in order to achieve a finely tuned balance of all three!
